While this is called Portobello bacon, you could really use any mushrooms that you like. White or crimini would be fine, as would oyster mushrooms.

Prepare your mushrooms. Clean them off with a towel. Next, mix the rest of the ingredients in a bowl or measuring cup

Add the mushrooms to a large bowl and toss with the marinade.

Add your soaked mushroom bacon to a lined baking tray and place on the top rack of your oven. Bake for 20-26 minutes
