Description

Pumpkin Spice Creamer is the ultimate fall recipe for your morning coffee. Put everything into a blender and it will be ready in 5 minutes.


Ingredients

  • 3/4-7/8 cup Puréed Pumpkin
  • 2 cups Water
  • 1/4 cup Pure Maple Syrup
  • 1 Teaspoon Vanilla Extract
  • 1/4-1/3 cup Raw Cashews
  • 1/4 Teaspoon Pumpkin Pie Spice

Instructions

  1. Note: If you do not have a high speed blender like a Vitamix, I highly recommend soaking the raw cashews in just-boiled water for 10-40 minutes before blending (pour off the water before adding to your blender with the rest of the ingredients). Alternatively, use canned coconut milk INSTEAD of the raw cashews, and either reduce the water or use all coconut milk depending on your preferences. Another option is to blend water with 1/3 - 1/2 cup nut or seed butter, but keep in mind these will have more flavor than raw cashews. Almond butter could be quite delicious with the pumpkin flavor!
  2. Blend: Add all the ingredients to a high speed blender. You want to add the cashews first. Having everything else on top of them will help prevent the cashew chunks from flying around during the blending. This will help make sure they get blended! Blend for 1 minute. Scrape down the sides and then blend for 30 second more or until mixture is smooth. Taste and adjust flavors if necessary.
  3. Store: Add contents to a mason jar with a lid or similar container. Use now or refrigerate until chilled. Enjoy within 4-5 days of blending. Note that if you can't finish it in time, you could blend it up with a banana or something to make a lovely smoothie.

Notes

  • Note 1: Having everything else on top of them will help prevent the cashew chunks from flying around during the blending. This will help make sure they get blended!
  • Note 2: We designed this recipe to act solely as a creamer. Most creamers are not super sweet. This lets you modify your coffee to whatever sweetness you want. It's easier to add more sugar than to remove it!
  • Note 3: If you want to make smaller batch, use a smaller blender, like a bullet blender. In large blenders, small batches might not even reach the blades.
  • Note 4: Store bought creamers use gums and thickeners to discourage separation, but separation is totally natural and fine, especially considering our recipe doesn't use such additives, it will separate. Just shake up the jar before serving!
