Description
Avocado Nice Cream is a super rich and creamy summer treat that you can make in your food processor! It's great way to save avocados.
Ingredients

- 2-3 Avocados, Diced and Frozen
- 2 Tablespoons Pure Maple Syrup or Agave
- 1 Tablespoon Coconut Oil
- 2 Tablespoons Non-Dairy Milk
- 1/2 cup Fresh Mint Leaves, Optional (see note 3)
- 1/2 cup Vegan Mini Chocolate Chips
Instructions
- Prep, Freeze the Avocado: Cut your avocados in half. Remove the pit and then remove the avocado shell by peeling the skin. Dice the avocado flesh. Add to a baking sheet with parchment paper or to a freeze bag and then add to freezer.
- Add Ingredients to Food Processor: Add all ingredients, EXCEPT the chocolate chips, to a food processor with an "S" blade attached.
- Process the Nice Cream: Power on your food processor (or a strong blender with a tamper, like a Vitamix) and and then blend your nice cream for about 30 seconds or until smooth. You may need to stop and scrap the sides down and then start processing again.
- Add the Chocolate Chips: Add the chocolate chips to the food processor and then blitz them until the incorporated. See Note 1.
- Serve and Enjoy!
Notes
- Notes 1: If you plan to store some of your nice cream, reduce the amount of chips you add and save them for later. If you plan to re-blitz your nice cream, this will make sure all your chocolate isn't obliterated.
- Note 2: If you just don't want to make your own frozen avocados, some stores sell it in packages.
- Note 3: This is an optional flavoring. Spearmint or peppermint extract would also work but be careful because they're quite strong. Start with a quarter teaspoon. Use any sort of flavoring you like, since avocado is a pretty neutral base! Add cocoa powder for chocolate avocado nice cream, a teaspoon of pure vanilla extract for vanilla avocado nice cream, and so on.
