Description

Easy Vegan Vanilla Pudding is a simple yet classic sweet treat you can make from home. This delicious dessert is only 6 ingredients!


Ingredients

Units Scale
  • 2 cups Non-Dairy Milk (see Note 1)
  • 1.5 Tablespoons Coconut Oil (see Note 2)
  • 1 Teaspoon Vanilla Bean Paste OR 2 Teaspoons Vanilla Extract
  • 1/3 cup Organic Cane Sugar (see Note 4)
  • 1/8 Teaspoon Salt
  • 2 Tablespoons Arrowroot Powder or Cornstarch

Instructions

  • Blend: Add the salt, sugar, vanilla extract, plant milk, and arrowroot powder to a high speed blender. Blend until smooth for about 15 to 30 seconds.
  • Melt the Coconut Oil: Grab a medium size pot and place it on medium heat. Add the coconut oil and let it turn from a solid to a liquid.
  • Add the Rest: Take the content of the blender and add them to the pot.
  • Whisk: for about 4-7 minutes, Whisk the pot frequently. It will be ready when the mixture is starts to thicken.
  • Store: Pour the mixture your prepare container(s). Let chill for 6 hours or overnight.

Notes

  • Note 1: We preferred unsweetened almond milk, but soy milk or oat milk will also work! If using a fattier plant, like coconut milk, you may need to alter the amount of oil you use.
  • Note 2: This adds a nice richness to the pudding.
  • Note 3: Both the vanilla extract and vanilla bean paste will work the same, but we find the vanilla bean paste is a bit more flavorful.
  • Note 4: Most granulated sugars should work, like coconut sugar or brown sugar. You could also try using maple syrup!
  • Note 5: Did your pudding turn out a little gloopy? Just mix it up with a spoon before serving and it should be good. It just comes with the territory when not using additives.
  • Note 6: Did your pudding turn out too thick? All you have to do is vigorously whisk in a few tablespoons of whichever non-dairy milk you used (we used almond milk) and it will be perfect!
