Description

This Vegan Peanut Butter Mug Cake is the perfect treat for any sweet tooth! Ready in just 5 minutes, this recipe uses only 8 ingredients.

Instructions

  1. Mix the Wet Ingredients: To the bottom of a mug, add all the wet ingredients and the sugar and mix until combined with a fork, spatula, or whisk.
  2. Add the Dry Ingredients: Add the flour and baking powder to the mixture and gently mix. Make sure not to over mix it!
  3. Add the Chocolate Chips: Pour 2/3 of the chocolate chips into the mug and gently mix them in. Top the cake batter with the remaining chips.
  4. Microwave the Mug Cake: Set your microwave to high and then cook for 1:30 to 1:45 minutes. Your cook times may differ depending on your microwave's wattage. We used a 1000 watt microwave. Keep an eye on microwave as the mug cake rises as depending on the mug it can over flow. The cake will no longer be wet and will have pulled away from the walls of the mug when done.
  5. Oven Method: If you don’t have a microwave, you can still make this vegan peanut butter mug cake in an oven-safe mug or small ramekin. Bake it on the top rack of your oven at 350 degrees Fahrenheit (or 177 degrees Celsius). You’ll want to bake it for 10-16 minutes (varies by oven and a variety of other factors) or until an inserted toothpick comes out clean. Be extra careful when removing it from the oven.
  6. Cool and Enjoy: Let the mug cake cool for about a minute or two. Add vegan ice cream or a drizzle of peanut butter (or other toppings) if desired and serve.

Notes

  • Note 1: We used a 12 oz microwave-safe mug for this recipe. Any smaller and the contents of the mug will overflow during the cake's rise. Avoid a mess and make sure your mug is big enough!
  • Note 2: Switch out the flour for an all purpose flour blend and it's easy to make this a gluten-free mug cake! We like King Arthur's Measure for Measure Flour or Bob's Red Mill 1:1 Gluten-Free Flour Blend.
  • Note 3: If you don't want a chocolate peanut butter mug cake, it's easy to just omit the chocolate chips. The bake will be fine without them.
  • Note 4: Vegan ice cream is very good at balancing the peanut butter flavor this cake has to offer. Our Vegan Buttercream would also be great! You could also make a chocolate drizzle to go on top instead of the chocolate chips. Or drizzle a bit more peanut butter!
