Vegan Peanut Butter Mug Cake

This Vegan Peanut Butter Mug Cake is the perfect treat for any sweet tooth! Ready in just 5 minutes, this recipe uses only 8 ingredients and mug. Just mix everything together, pop it in the microwave, and then you'll have this delicious peanut butter cake. Oven directions included as well.

Hey Internet, we've got another tasty treat for you. This vegan mug cake uses peanut butter to make a fluffy and moist cake. When the sweet craving strikes, all you have to do is grab a mug and it will be ready in minutes.

This amazing vegan peanut butter mug cake is my new obsession for dessert or even a snack. It's cozy and delicious. Plus, easier for portion control!

We've made lots of different version of this delicious cake with different flavors. Our Vegan Mug Brownie, which was our first mug cake recipe, is the best chocolate mug cake in the world with a fudgy texture! The best part of this recipe is that most, if not all, of the ingredients might be in your house right now. Most of them are non-perishables and are staples for vegans. You could be making a (little) whole cake right now in just 5 minutes! So get your favorite mug and get mixing. 

Why You'll Love This Vegan Peanut Butter Mug Cake Recipe

  • Super Easy: Mix your wet ingredients, then gently mix in the dry ingredients, and then microwave. All you need is a mug and either a small spatula or small whisk.
  • Single Serving: It's easy to portion control when the recipe only makes one serving! 
  • Chocolate Peanut Butter Flavor: With smooth natural peanut butter, you get a great moist cake.  

Ingredients

Pick up these simple ingredients the next time you're at a grocery store. See the recipe card at the bottom of this post for full ingredients, instructions, and accurate nutrition information (to the best of my ability; please consult your physician or healthcare professional if you have specific dietary needs or need to meet a certain daily value of any nutrient). I give substitutions for the ingredients in the section below this one, so most people can still make this recipe!

Wet Ingredients

  • 4 Tablespoons Non-Dairy Milk: We used soy milk for our recipe, but almond milk, cashew milk, and oat milk should work just as well. Avoid coconut milk as the higher fat content may mess with the balance of the cake batter.
  • 1 Tablespoon Coconut Oil
  • 2 Tablespoons Salted Peanut Butter: We use a smooth peanut butter to make the cake. Of course you can use whatever kind of peanut butter you like but it may affect the final outcome since every peanut butter is different.
  • 1.5 Tablespoons Granulated Cane Sugar
  • 0.25 Teaspoons Pure Vanilla Extract, Optional

Dry Ingredients

  • 0.25 Cup All-Purpose Flour
  • 0.5 Teaspoon Baking Powder
  • 2-3 Tablespoon Vegan Chocolate Chips: You can use any dairy-free chocolate chips you like! I think dark chocolate chips would be especially good in this recipe but they can be hard to find vegan for some reason.

Substitutions

  • Peanut Butter: While it wouldn't be a peanut butter mug cake anymore, there are ingredients that would work in place of it. Cashew butter, almond butter, and seed butters like sunflower butter will work in place of the peanut butter. Try this recipe with my favorite chocolate hazelnut butter!
  • Flour: Switch out the flour for an all purpose flour blend and it's easy to make this a gluten-free mug cake! We like King Arthur's Measure for Measure Flour or Bob's Red Mill 1:1 Gluten-Free Flour Blend.
  • Cane Sugar: You could switch to a different sugar like brown sugar or coconut sugar. Alternatively, use 1 to 1.25 Tablespoons of a liquid sweetener like pure maple syrup, date syrup, or agave if you want to avoid white sugar.

How to Make a Vegan Peanut Butter Mug Cake

  1. Mix the Wet Ingredients: To the bottom of a mug, add all the wet ingredients and the sugar and mix until combined with a fork, spatula, or whisk.
  2. Add the Dry Ingredients: Add the flour and baking powder to the mixture and gently mix. Make sure not to over mix it!
  3. Add the Chocolate Chips: Pour ⅔ of the chocolate chips into the mug and gently mix them in. Top the cake batter with the remaining chips.
  4. Microwave the Mug Cake: Set your microwave to high and then cook for 1:30 to 1:45 minutes. Your cook times may differ depending on your microwave's wattage. We used a 1000 watt microwave. Keep an eye on microwave as the mug cake rises as depending on the mug it can over flow. The cake will no longer be wet and will have pulled away from the walls of the mug when done.
  5. Oven Method: If you don’t have a microwave, you can still make this vegan peanut butter mug cake in an oven-safe mug or small ramekin. Bake it on the top rack of your oven at 350 degrees Fahrenheit (or 177 degrees Celsius). You’ll want to bake it for 10-16 minutes (varies by oven and a variety of other factors) or until an inserted toothpick comes out clean. Be extra careful when removing it from the oven.
  6. Cool and Enjoy: Let the mug cake cool for about a minute or two. Add vegan ice cream or a drizzle of peanut butter (or other toppings) if desired and serve.

Frequently Asked Questions

Do I need to add the chocolate chips?

If you don't want a chocolate peanut butter mug cake, it's easy to just omit the chocolate chips. The cake will bake fine without them.

What toppings do you recommend for this mug cake?

Vegan ice cream is very good at balancing the peanut butter flavor this cake has to offer. Our Vegan Buttercream would also be great! You could also make a chocolate drizzle to go on top instead of the chocolate chips. Or microwave a tablespoon of peanut butter in a small dish to top with an extra peanut butter drizzle for even more peanut flavor.

What size mug should i use to make this cake?

We used a 12 oz microwave-safe mug for this recipe. Any smaller and the contents of the mug will overflow during the cake's rise. Avoid a mess and make sure your mug is big enough!

Can I make a healthy peanut butter mug cake?

Sure, feel free to experiment with this recipe! It's much easier to experiment with a small mug cake recipe rather than a full sized cake! Try replacing some of the refined flour with almond flour, brown rice flour, whole wheat flour or any whole grain flour, or even protein powder. You could also try powdered peanut butter instead of natural peanut butter.
