Coconut Milkshake

Description

This Coconut Milkshake is so creamy! With just 5 ingredients (you really only need 3), it's a super easy to make summer treat.


Ingredients

Units Scale
  • 1 cup Dairy Free Vanilla Ice Cream (we used So Delicious Dairy Free coconut based vanilla ice cream, see Note 1 for substitutions)
  • 1 Can (13.5 oz) Full Fat Coconut Milk (see Note 2 for substitutions)
  • 1 cup Ice Cubes
  • Vegan Whipped Cream, for Topping, Optional
  • Toasted Coconut Flakes, for Topping

Instructions

  1. Blend: In a high speed blender, add the coconut vanilla ice cream, coconut milk, and ice cubes. Blend until mixed.
  2. Taste: Taste a little of the milkshake. You can adjust the thickness of it with more ice cream or more milk.
  3. Serve: Add creamy coconut shake to a glass. Top with vegan whipped cream, toasted coconut flakes, or any other toppings.

Notes

  • Note 1: If you can't find a vegan ice cream, bananas are a good choice for a base. Take ripe bananas, cut them into rounds, and them freeze them. They have a natural sweetness that will pair well with the creamy coconut milk.
  • Note 2: You could use another plant-based milk, like soy milk or almond milk, you just need to make sure you are still getting in some coconut flavor. Remember that these are not thick milks like the coconut milk is, so you may want to add some soaked cashews or sunflower seeds. Otherwise your milkshake will be thinner. You could also add more ice cream! If you replace both the ice cream and the coconut milk, consider adding a quarter teaspoon coconut extract.
  • Note 3: Add a little splash of vanilla extract for more flavor!
