This Coconut Milkshake is so creamy! With just 5 ingredients (you really only need 3), it's a super easy to make summer treat. Add everything to a blender and in just a few minutes you're good to go with this coconut shake recipe.

Hey Internet, we've got another great drink recipe for you today. It's been so hot out and we've been using our blender to make cool drinks for right after walks. It really helps to have one to wind down. And we like to indulge our sweet tooth as well with these homemade coconut milkshakes.

Coconut cream is so rich and creamy and it has so many uses. It's great in baking, like our Vegan Matcha Pound Cake, to make dairy-free cheese, like our Vegan Brie, as a cream in soups and stew, such as out Vegan Stew with Dumplings, and so much more!

You can use a can of full fat coconut milk or canned coconut cream for this recipe, whichever you can find at your local grocery store. We tested it with both options and both added a rich texture to this great recipe

We wanted to try adding that rich coconut flavor to a milkshake because it sounded delicious. With a little vegan ice cream and ice cubes, it was really easy to make. Any coconut lover should give this recipe a try!

Ingredients

Pick up these simple ingredients the next time you're at a grocery store. See the recipe card at the bottom of this post for full ingredients, instructions, and accurate nutritional information (to the best of my ability; please consult your physician or healthcare professional if you have specific dietary needs). I give substitutions for the ingredients in the section below this one, so most people can still make this recipe!

  • 1 Cup Dairy Free Vanilla Ice Cream: Extra points for coconut base; we like the one by So Delicious Dairy Free brand.
  • 1 Can (13.5 oz) Coconut Milk: Canned unsweetened coconut milk is rich and creamy. It's great to use instead of almond milk to get that coconuty flavor and is loaded with healthy fats. For best results, we recommend using full fat canned coconut milk or canned coconut cream. Don't use the stuff in the refrigerator section that comes in a carton, it's very watered down.
  • 1 Cup Ice Cubes
  • Vegan Whipped Cream, for Topping, Optional
  • Toasted Coconut Flakes, for Topping: You could also add some toasted shredded coconut into your blender IF you have a high-speed blender. If not, I'd save them for the topping since a regular blender may not be able to blend these smooth. Try a quarter teaspoon of coconut extract instead if you really want more coconut flavor in the coconut milkshake.

Substitutions

  • Coconut Ice Cream: Almond-based or cashew-based ice cream are great options for replacements. Just make sure to still use the canned coconut milk to get that coconut flavor!
  • Coconut Milk: You could use another plant-based milk, like soy milk or almond milk, you just need to make sure you are still getting in some coconut flavor. Remember that these are not thick milks like the coconut milk is, so you may want to add some soaked cashews or sunflower seeds. Otherwise your milkshake will be thinner. You could also add more ice cream! If you replace both the ice cream and the coconut milk, consider adding some coconut extract.
  • Vegan Whipped Cream: If you can't find any store-bought vegan whipped cream, you can always make your own! We have this Aquafaba Whipped Cream that you can make ahead of time using the water from canned chickpeas!

How to Make a Coconut Milkshake

  1. Blend: In a high speed blender, add the coconut vanilla ice cream, coconut milk, and ice cubes. Blend until mixed.
  2. Taste: Taste a little of the milkshake. You can adjust the thickness of it with more ice cream or more milk.
  3. Serve: Add creamy coconut shake to a glass. Top with vegan whipped cream, toasted coconut flakes, or any other toppings.  

Recipe Variations

  • Pina Colada Milkshake: Add chunks of frozen pineapple to your coconut milkshake for a refreshing tropical treat with a creamy texture.
  • Chocolate Coconut Milkshakes: Add a little cocoa or cacao powder to your blender jar for a chocolaty twist on our decadent treat. Start with a little bit (1-2 tablespoons) and adjust from there.
  • Strawberry Coconut Milkshake: Add frozen strawberries instead of or in addition to the ice cream for a delicious flavor.
  • No Ice Cream: Try freezing fresh banana and blending with the rest of the ingredients for the perfect drink that's a little healthier.

Frequently Asked Questions

Any Other Additions I Can Make to This Shake Recipes?

Make it a vanilla coconut milkshake with a drop of vanilla extract. You could also add a little frozen mango or pineapple to get a more tropical flavor!

Can I Use Light Coconut Milk Instead?

Yes! It won't be as rich, but you might prefer that! If you want to lower the fat content, you can always use another type of non-dairy milk and add a quarter teaspoon of coconut extract. It won't have a thick texture like the full fat coconut milk, but that's just a compromise you can choose to make. Or try adding non-dairy yogurt, like our Instant Pot soy yogurt.

I Can't Find Any Vegan Ice Cream Near Me! What Can I Do?


If you can't find a vegan ice cream, bananas are a good choice for a base. Take ripe bananas (with lots of brown speckles on the skin is best), peel them, cut them into rounds, and then freeze them. They have a natural sweetness that will pair well with the creamy coconut milk.
