Description

Strawberry Mug Cake is a super easy single serving dessert that is ready in 5 minutes! A rich and sweet treat!

Instructions

  1. Add the Wet Ingredients: First add your coconut oil, non-dairy milk, vanilla extract, and sugar (we're counting it as a liquid here because it will incorporate well) to a microwave-safe mug. Whisk together.
  2. Add the Dry Ingredients: Add your all-purpose flour and then your baking powder to the mug. Gently mix everything into a batter, making sure to scrape down the sides of the mug.
  3. Add the Strawberries: Cut the strawberries into small pieces and add some to batter. Carefully mix them into the batter, making sure not to overwork it. Then sprinkle a few remaining strawberries on the top of the batter.
  4. Microwave: Add the mug to a microwave and then microwave on high for 1 minute 15 seconds. If the mug cake isn't fully cooked, microwave it in 10 second intervals until the batter is no longer wet.
  5. Serve and Enjoy: Add topping such as vegan whipped cream or chocolate chips.

Notes

  • Note 1: Vegan whipped cream, vegan chocolate chips, vegan ice cream or extra strawberries are excellent toppings for this recipe.
