Description
Strawberry Mug Cake is a super easy single serving dessert that is ready in 5 minutes! A rich and sweet treat!
Ingredients

- 0.25 cup All-Purpose Flour
- 1 Tablespoon Coconut Oil
- 1.5 Tablespoons Cane Sugar
- 0.5 Teaspoon Baking Powder
- 3 Tablespoons Non-Dairy Milk
- 0.25 Teaspoon Vanilla Extract
- A Pinch of Salt (about 1/8 teaspoon)
- 2-3 Medium Fresh Strawberries, Diced
Instructions
- Add the Wet Ingredients: First add your coconut oil, non-dairy milk, vanilla extract, and sugar (we're counting it as a liquid here because it will incorporate well) to a microwave-safe mug. Whisk together.
- Add the Dry Ingredients: Add your all-purpose flour and then your baking powder to the mug. Gently mix everything into a batter, making sure to scrape down the sides of the mug.
- Add the Strawberries: Cut the strawberries into small pieces and add some to batter. Carefully mix them into the batter, making sure not to overwork it. Then sprinkle a few remaining strawberries on the top of the batter.
- Microwave: Add the mug to a microwave and then microwave on high for 1 minute 15 seconds. If the mug cake isn't fully cooked, microwave it in 10 second intervals until the batter is no longer wet.
- Serve and Enjoy: Add topping such as vegan whipped cream or chocolate chips.
Notes
- Note 1: Vegan whipped cream, vegan chocolate chips, vegan ice cream or extra strawberries are excellent toppings for this recipe.
