Strawberry Mug Cake

Strawberry Mug Cake is a super easy single serving dessert that is ready in 5 minutes! With a lusciously fluffy crumb, sweet strawberries help balance the cake to make for tasty treat. It's the perfect dessert for strawberry season!

Hey Internet, we love mug cakes! They are such an easy dessert, yet there are so many different types that you can make. You can always go with a classic cake flavor, like our Vegan Vanilla Mug Cake, but you can get a little crazy too, like with our Vegan Matcha Mug Cake. It's easy to get cookies, like our Vegan Mug Cookie, or brownies, like Vegan Mug Brownie, straight out of the microwave. They can even be a great source of protein, like with this Vegan Protein Mug Cake. There's so many ways you can go with them!

It's strawberry season right now where we are. We've been able to get a bunch of fresh strawberries for really good prices. They've been serving as a topping for our morning breakfast bowls that we make with our homemade soy yogurt. We also made Vegan Strawberry Milk and still have to make our Vegan Strawberry Shortcake at least a few times this season.

But maybe we got a little too carried away with the strawberry purchases. Our fridge is chock-full of strawberries right now. We can't let these fresh berries go to waste.

So now we have some berry recipes in the pipeline and this easy vegan strawberry cake in a mug is the first of many. 

This quick dessert is great for any sweet tooth. It has a sweet, rich crumb that is nice and fluffy. With chopped strawberries adding a fresh component and a little vegan whipped cream on top, you'll love this flavorful dessert!

Why You'll Love This Strawberry Mug Cake

  • Easy Recipe: With just 8 simple ingredients (mostly pantry ingredients) and taking only 5 minutes to make, it doesn't get much easier that this strawberry mug cake!
  • Juicy Strawberries: Not dried or just strawberry extract, we use fresh fruits to get our flavor!
  • Toppings: With a little vegan whipped cream, a sprinkle of dairy-free chocolate chips, or a little vanilla ice cream, there's a lot of exciting things you can put on this cake.

Ingredients

Pick up these simple ingredients the next time you're at a grocery store. See the recipe card at the bottom of this post for full ingredients, instructions, and accurate nutritional information (to the best of my ability; please consult your physician or healthcare professional if you have specific dietary needs). I give substitutions for the ingredients in the section below this one, so most people can still make this recipe!

  • 0.25 Cup All-Purpose Flour
  • 1 Tablespoon Coconut Oil: Coconut oil is a great way to get a lot of extra richness to this mug cake while pairing well with the strawberries and vanilla with its coconut flavor.
  • 1.5 Tablespoons Cane Sugar
  • 0.5 Teaspoon Baking Powder
  • 3 Tablespoons Non-Dairy Milk: We used soy milk for our vegan mug cake recipe, but oat or almond milk should work as well.
  • 0.25 Teaspoon Vanilla Extract
  • A Pinch of Salt (a little less than ⅛ teaspoon): This helps with rise of the cake as well as with flavor. It's important in not just mug cake recipes, but baking cakes in general.
  • 2-3 Medium Fresh Strawberries, Diced: Make sure to reserve some of these. We're going to mix some into the cake mix and then place some more on top of the batter before microwaving.

Substitutions

  • Strawberries: You could do other fruits like blueberries or blackberries, if you don't mind it not being a strawberry mug cake anymore! Note that the cut strawberries do add some moisture to the batter, so you may need to adjust your ratios before microwaving. You could also use frozen fruit but I would thaw it and drain (or drink) the excess liquid so it doesn't make your cake soggy.
  • Cane Sugar: You can use either maple syrup or agave for this recipe, but you'll need to add more dry ingredients to get the right crumb. A little more flour should help.
  • Coconut Oil: You can substitute this with some vegan butter or olive oil with only a little change to the flavor profile. Avoiding oil? Try a tablespoon of creamy raw cashew butter or almond butter. Note that these will affect the flavor.
  • All-Purpose Flour: King Arthur Flour Measure 4 Measure Gluten Free Flour should work as a one-to-one replacement for a gluten-free mug cake. We haven't tested this recipe with any other flours. You could definitely add strawberries to our oat mug cake if you want to try an alternative flour! Remove the cocoa if you like or leave it in for a chocolate-covered strawberry vibe.

How to Make Strawberry Mug Cakes

  1. Add the Wet Ingredients: First add your coconut oil, non-dairy milk, vanilla extract, and sugar (we're counting it as a liquid here because it will incorporate well) to a microwave-safe mug. Whisk together.
  2. Add the Dry Ingredients: Add your all-purpose flour and then your baking powder to the mug. Gently mix everything into a batter, making sure to scrape down the sides of the mug.
  3. Add the Strawberries: Cut the strawberries into small pieces and add some to batter. Carefully mix them into the batter, making sure not to overwork it. Then sprinkle a few remaining strawberries on the top of the batter.
  4. Microwave: Add the mug to a microwave and then microwave on high for 1 minute 15 seconds. If the mug cake isn't fully cooked, microwave it in 10 second intervals until the batter is no longer wet.
  5. Serve and Enjoy: Add topping such as vegan whipped cream or chocolate chips.

What Size Mug Should I Use for This Recipe?

The mug we used for this recipe was an 8 oz mug. It should fit in most standard mugs!

What Power Level Should my Microwave Be?

We had ours at full power, so you shouldn't have to mess with that setting.

I Want Even More Strawberry Flavor! What Should I Do?

You can always add a pinch of strawberry extract and it shouldn't alter the recipe too much. Only add a little as it is strong!

Can I Make a Mug Cake in an Oven?

Follow the steps in the recipe to make this strawberry mug cake—but place it in a ramekin instead and bake in a 350 degrees Fahrenheit (177 degrees Celsius) oven for 10-20 minutes (will depend on the size and shape (diameter, depth, etc.) of your ramekin. You’ll know it’s done when the top looks set, the edges look browned, and an inserted toothpick comes out clean.
