Description
Vegan Guacamole is a great addition to any Taco Tuesday! With avocado, spicy jalapeno peppers, fresh lime juice and zest, and fresh tomatoes, you'll want to put this simple recipe on everything.

- 2 cups Hoss Avocados, Diced
- 2 Tablespoons Fresh Lime Juice
- 1 Teaspoon Lime Zest
- 1/3 cup Red Onion, Diced
- 1 cup Grape Tomatoes, Quartered
- 1 Medium Jalapeño, Diced, Optional
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Ground Cumin
- 1/4 cup Fresh Cilantro Leaves, Chopped, Optional
Instructions
- Dice Your Avocados: Slice your avocados in half, following the hard pit. Twist to separate the halves. Using a spoon, gently remove the avocado pit from the half it stuck to. Carefully cut the avocado flesh into cubes while still in the skin. Turn skin inside out to release the cubes.
- Zest and Squeeze your Limes: Using a zester lightly remove the rind of the limes, making sure to get as little of the white part underneath. Afterwards, slice limes in half and then juice them with a juicer.
- Dice your Jalapeño peppers: Wearing food safe gloves, dice your jalapeño by cutting the stem off and then removing the seeds.
- Prepare the Other Ingredients: Dice your red onion and quarter your tomatoes.
- Add Everything to a Bowl EXECPT TOMATOES: Add the avocados, lime juice and zest, onion, jalapeño, tomatoes, spice and herbs into a large mixing bowl.
- Mash: Using a fork, mash the ingredients into a guacamole. Be gentle to leave some of the avocado intact to give a little chunky texture to your guacamole.
- Add the Tomatoes: Add the tomatoes to the bowl and then gently fold them in to the guacamole.
- Serve and Enjoy: Use as a dip with chips or as a filling tacos, sandwich or just about anything!
Notes
- Note 1: We like to get avocados from Costco (not sponsored) as they tend to have the best flavor and texture while being a good price.
- Note 2: A tip for picking out the best limes: choose limes that have a smooth skin and feel relatively heavy for their size. These will have the most juice.
- Note 3: We think grape tomatoes or cherry tomatoes make the best guacamole. They're flavorful and bonus that they leak less liquid into your guac.
