Hey Internet, there were some good deals for avocados at the store near us. We figured it was a sign to make the easy vegan guacamole recipe we had been wanting to try for a while. With some simple ingredients, we were dipping our chips in no time.
It is so much better that store-bought guacamole. When I first tasted it, I said it was the best guacamole I've ever had. This is the only guacamole recipe you'll need. Get ready for the perfect dip!
There's something nice about fresh cherry tomatoes, lime juice with a little zest from the rind for that extra lime flavor, and just chopped red onion. Fresh ingredients are really the best way to make a homemade guacamole.
We've made a lot of vegan recipes that would go great with this guacamole (hint: any Mexican-inspired meal!). Pick up these simple ingredients the next time you're at a grocery store. See the recipe card at the bottom of this post for full ingredients, instructions, and accurate nutritional information (to the best of my ability; please consult your physician or healthcare professional if you have specific dietary needs). I give substitutions for the ingredients in the section below this one, so most people can still make this recipe!
- 2 Cups Hass Avocados, Diced: These are the perfect avocados for a good guacamole. So creamy yet they are large avocados. We like to get ones from Costco (not sponsored) as they tend to have the best flavor and texture while being a good price.
- 2 Tablespoons Fresh Lime Juice: That comes to about 1-2 limes' worth of juice, depending on the size of your limes. A tip for picking out the best limes: choose limes that have a smooth skin and feel relatively heavy for their size. These will have the most juice.
- 1 Teaspoon Lime Zest: This is about 1 limes worth of zest. That way you won't have to painstakingly get all your zest into a measurement spoon like we did to get the exact measurements.
- ⅓ Cup Red Onion, Diced
- 1 Cup Grape Tomatoes, Quartered: We think grape tomatoes or cherry tomatoes make the best guacamole. They're flavorful and bonus that they leak less liquid into your guac.
- 1 Medium Jalapeño, Diced: (for a little kick, but optional)
- ½ Teaspoon Salt: You can add fresh cracked black pepper too if you like.
- ½ Teaspoon Ground Cumin
- ¼ Cup Fresh Cilantro Leaves, Chopped, Optional: Look, you either love cilantro or you think you're chopping into a bar of soup. It's an important part of Mexican cuisine, and if you can enjoy these fresh herbs, you do you.
Substitutions
- Lime Juice and Zest: Lemon juice can work in a pinch. You could also try white wine vinegar.
- Cilantro: If you don't have cilantro, or are cursed to never know this lemon peppery flavor that other people describe it having (like me, Paul), parsley can be an easy way to add light and subtle flavors to your vegan guacamole dip.
- Red Onion: While they do taste a little different, white onion or yellow onions can make for an easy replacement for the red onions.
- Grape Tomatoes: Roma tomatoes are another great choice. Avoid beefsteak tomatoes as we want tomatoes that have plenty of delicious flavor on their own.

How to Make Vegan Guacamole
- Dice Your Avocados: Slice your avocados in half, carving around the hard pit. Twist to separate the halves. Using a spoon, gently remove the avocado pit from the half it stuck to. Carefully cut the avocado flesh into cubes while still in the skin. Turn skin inside out to release the cubes.
- Zest and Squeeze your Limes: Using a zester lightly remove the rind of the limes, making sure to get as little of the white part underneath. Afterwards, slice limes in half and then juice them with a juicer.
- Dice your Jalapeño: Wearing food safe gloves, dice your jalapeño by cutting the stem off and then removing the seeds.
- Prepare the Other Ingredients: Dice your red onion and quarter your tomatoes.
- Add Everything to a Bowl EXECPT TOMATOES: Add the avocados, lime juice and zest, onion, jalapeño, tomatoes, spice and herbs into a large mixing bowl.
- Mash: Using a fork, mash the ingredients into a guacamole. Be gentle to leave some of the avocado intact to give a little chunky texture to your guacamole.
- Add the Tomatoes: Add the tomatoes to the bowl and then gently fold them in to the guacamole.
- Serve and Enjoy: Use as a dip with chips or as a filling tacos, sandwich or just about anything!
Storage Instructions
Add any leftover guacamole to an airtight container. Store in a refrigerator for 2-3 days.
