Peach Mug Cake

Description

This Peach Mug Cake is a super easy dessert to have in the summer! Just mix your cake batter in a mug and then gentle add some juicy peaches.

Instructions

  1. Mix the Wet: To the bottom of a mug, add all the wet ingredients and the sugar and mix until combined with a fork or whisk.
  2. Add the Dry: Add the flour, salt, and baking powder to the mixture and gently mix. Make sure not to over mix it!
  3. Add the Peaches: Place most of the diced peaches into the mix and gently fold them in. Then place the remain fruit on top of the mix and lightly press them in.
  4. Microwave the Mug: Place you mug in a microwave and set it to 1:15 on high. Times may vary depending on your microwave. The cake will no longer be wet and will have pulled away from the walls of the mug when done. You may need to add an additional 20 seconds of cooking after the first microwave.
  5. Serve and Enjoy: Add any toppings, such as caramelized peaches or non-dairy vanilla ice cream and then eat!

Notes

  • Note 1: Any neutral oil, like grapeseed oil, should work in place of the coconut oil. Coconut oil just pairs well with the vanilla extract with its unique flavor. If you're oil-free, try a tablespoon of cashew butter or even a tablespoon of unsweetened applesauce! In a pinch, just add another tablespoon of plant based milk and it should turn out fine.
  • Note 2: You can try using a little brown sugar to pair with the gooeyness. You could also try maple syrup or agave, but I haven't tested it and you may need a half tablespoon more flour.
