This Peach Mug Cake is a super easy dessert to have in the summer! Just mix your cake batter in a mug and then gentle add some juicy peaches. This is a must try during peach season!
Hey Internet, we've got a peachy dessert for you today. It's still peach season where we are at time of writing, so we are trying to make the most of it with new recipes. We have our Peach Dutch Baby, Caramelized Peaches, and or Peach Chia Pudding that we've made to take advantage of the fresh peaches.
And we're still on a roll! This time we're bringing you this 5 minute gooey vanilla peach mug cake that's so good. With a little vegan ice cream on top, you get an amazing dessert you and your family will love!
We really love mug cakes because they're so quick and easy to make. We're talking less than 5 minutes from when you start gathering ingredients to holding a baked mug cake in your hands! You might want to let it cool for a few minutes, though...
We have a LOT of vegan mug cake recipes by this point, including our Strawberry Mug Cake, Vegan Vanilla Mug Cake, and Vegan Mug Brownie. But we really love this peach mug cake, so let's talk about how to make it!
Why You'll Love Peach Mug Cakes
- Easy Dessert: Mix everything in a microwave-safe mug and just add it to a microwave for a little over a minute!
- Peachy Keen Flavor: Your peaches will get a little gooey from the cooking but still have that fresh sweet flavor.
- Personal-sized Cake: Makes it much easier to portion control.
Ingredients
Pick up these simple ingredients the next time you're at a grocery store. See the recipe card at the bottom of this post for full ingredients, instructions, and accurate nutritional information (to the best of my ability; please consult your physician or healthcare professional if you have specific dietary needs). I give substitutions for the ingredients in the section below this one, so most people can still make this recipe!
- ⅓ Cup Fresh Peaches, Diced: We found that peach slices resulted in a more uneven cook on the mug cake. Diced peaches helped the bake so much more and were easier to measure!
- 0.25 Cup All-Purpose Flour
- 1 Tablespoon Coconut Oil
- 1.5 Tablespoons Organic Cane Sugar
- 0.5 Teaspoon Baking Powder
- 3 Tablespoons Soy Milk
- 0.25 Teaspoon Vanilla Extract
- A Pinch of Salt, or About ⅛ Teaspoon
- Vegan Vanilla Ice Cream, For Topping: Optional, but it makes the cake taste like a peach cobbler!
Substitutions
- Flour: 1:1 Gluten Free Flour should work as a replacement for the flour if you are looking for a gluten-free recipe.
- Coconut Oil: Any neutral oil, like grapeseed oil, should work in place of the coconut oil. Coconut oil just pairs well with the vanilla extract with its unique flavor. If you're oil-free, try a tablespoon of cashew butter or even a tablespoon of unsweetened applesauce! In a pinch, just add another tablespoon of plant based milk and it should turn out fine.
- Cane Sugar: You can try using a little brown sugar to pair with the gooeyness. You could also try maple syrup or agave, but I haven't tested it and you may need a half tablespoon more flour.
- Soy Milk: Oat milk and almond milk will work with this recipe. Or use any non-dairy milk.
- You could also try adding a pinch of cinnamon if you like.
How to Make a Peach Mug Cake
- Mix the Wet Ingredients: To the bottom of a mug, add all the wet ingredients and the sugar and mix until combined with a fork or whisk.
- Add the Dry Ingredients: Add the flour, salt, and baking powder to the mixture and gently mix. Make sure not to over mix it!
- Add the Peaches: Place most of the diced peaches into the mix and gently fold them in. Then place the remain fruit on top of the mix and lightly press them in.
- Microwave the Mug: Place you mug in a microwave and set it to 1:15 on high. Times may vary depending on your microwave. The cake will no longer be wet and will have pulled away from the walls of the mug when done. You may need to add an additional 20 seconds of cooking after the first microwave.
- Serve and Enjoy: Add any toppings, such as caramelized peaches or non-dairy vanilla ice cream and then eat!
