Hey Internet, it's no secret that we love soups and stews around here. They're just so warm and cozy, and are perfect on a cold or rainy day (though we've been known to enjoy soups like our Vegan Zucchini Soup in the summertime!).
We think you must really like our soups and stews too, because many of our most popular and highest rated recipes on the blog are our soup and stew recipes! We're talking the best of the best, such as our Vegan Stew with Dumplings, Vegan Matzo Ball Soup, Vegan Beef Stew, Vegan Tom Kha Soup, Vegan Gnocchi Soup, Vegan Cream of Mushroom Soup, and Vegan Chicken and Dumplings, to name just a few.
But we don't want to name a few! We've had multiple people ask us for a list of ALL our easy vegan soup recipes and vegan stew recipes, so today we're bringing you that big list! Keep reading for some of the BEST hearty soups with so much flavor!

What's the Difference between Soup and Stew?
Soup is generally more brothy (higher liquid to solids ratio, so more cups of broth). Stews are considered to be more hearty and generally have a slightly larger-cut on the veggies, or a thicker liquid.
Blended soups are generally still considered to be soups even if they're quite thick, like our Vegan Zucchini Soup.
Some soups are kind of in between, such as red lentil soup. It's hearty and thick, yet not called a stew.
We think it doesn't really matter... call it what you want and just make delicious soup/stew/bowls of awesome.
Our Favorite Soup Ingredients
Some of the best soup ingredients are also the most inexpensive ingredients! Fresh garlic, fresh veggies like bell pepper, carrots, celery, Yukon gold potatoes or sweet potatoes, and yellow onion... these are great staples. I believe any great soup can be started with simply cooking a bunch of veggies in a little extra virgin olive oil (or broth if you are oil-free) and adding some vegetable broth.
Standards for building flavor include simple ingredients that are pantry staples like veggie broth or vegetable stock (you can make your own from vegetable scraps if you're really looking to save money!), tomato paste, nutritional yeast, spices, fresh black pepper, and dried herbs (fresh thyme and other fresh herbs are great but dried are more economical), and more. You can also add a lot of flavor to finish a soup with a little lemon juice or lime juice, or a little trick I like to use is a splash of vinegar! Plus some fresh green onion will go a long way!
We love adding plant-based protein to our soups too with tofu, soy curls, seitan, tempeh, brown or green lentils, beans such as kidney beans, black beans, cannellini beans, chickpeas, and more. You can use your favorites here! Try mixing and matching for extra protein!
We also really love to make creamy vegan soups by adding coconut milk or blended raw cashews or sunflower seeds (check out our sunflower seed cream or even cooked cauliflower florets or white beans! Even silken tofu can be added to make a soup creamy and in our opinion, creamy soups are the best.
A few ingredients fall into the "not necessary but really nice to have" category. Our favorite example of that would be the Better Than Bouillon No Chicken Base (link) and No Beef Base (link). These are vegan concentrated stock pastes that will last forever in your fridge and are super easy to use—simply whisk a bit into hot water and you have yourself a super flavorful stock! We use this product in many of our hearty vegan soup recipes like our Vegan Orzo Soup and our Vegan Beef Stew.
We should also talk about equipment. All you really need is a large pot like a Dutch oven, a spatula for sautéing the vegetables, a ladle for serving the soup, and some bowls! I mean, you probably need a knife and cutting board to chop the veggies too! Nice-to-have equipment would include an immersion blender and an Instant Pot, but you don't absolutely need them.
