Vegan Peanut Noodles

Vegan Peanut Noodles are a sweet and spicy entree that will leave you feeling satisfied. The flavorful vegan peanut sauce uses pantry staples, is ready in 5 minutes, and you only need a mixing bowl to make it. Add it to your favorite pasta for a ton of flavor!

Hey Internet, we got another amazing vegan pasta recipe for you today. You can't go wrong with a good bowl of noodles. Not only are they tasty, but noodles cook really fast! All you need is a great sauce to go with them and you've got an easy meal for those busy weeknights. 

You could go with a garlic sauce, like with our Vegan Garlic Noodles. Tomato is also great, like this Vegan Penne alla Vodka. You can even get creamy pasta with some vegan cream cheese, like in our Vegan Sun-dried Tomato Pasta, or with non-dairy milk, like with our Vegan Creamy Pasta.

But today, our recipe's sauce base is made with two amazing flavors; sweet creamy peanut butter and spicy sriracha (use as much or as little as you like, or omit for no spice and the sauce will still be flavorful). These easy vegan peanut noodles are perhaps the easiest and most delicious recipe we have on ZardyPlants. The best part is that you don't need anything fancy to make this dish. Just a bowl or measuring cup to mix up the sauce ingredients and a pot to cook your noodles. You could even make this recipe faster if you buy fresh noodles from the store or have some already made. 

What's nice is that this recipe is super easy to customize too. If you're not a fan of spicy food, you could reduce or remove the sriracha to make a creamy peanut sauce. Alternatively, you can make this into a super spicy peanut noodles recipe by adding more sriracha or adding other spices like chili flakes or red pepper flakes. You could even add some of your favorite veggies that you stir fry. Bell peppers, snap peas, and mushrooms would do nicely. And definitely top this dish with some green onions or sesame seed.

These vegan peanut noodles are also great warm or cold, so you can enjoy them on the go!

Let's get into these vegan peanut butter noodles.

Why You'll Love These Vegan Peanut Noodles

  • Staple Ingredients: There's a good chance you have most, if not all, of the ingredients you need to make these vegan noodles with peanut sauce. And a lot of them will be in your pantry!
  • Really Fast Cook Time: The whole recipe will likely only take about 15 minutes to make. However, this includes the cook time for the pasta. The sauce itself will come together even quicker.
  • Very Little Clean Up: To make this recipe, you'll need a pot, a bowl or measuring cup, a whisk, a strainer, and some measuring spoons. Not that many dishes for a delicious peanut sauce.

Ingredients

See the recipe card at the bottom of this post for full ingredients, instructions, and accurate nutritional information (to the best of my ability; please consult your physician or healthcare professional if you have specific dietary needs). I give substitutions for the ingredients in the section below this one, so most people can still make this recipe!

  • 3 Tablespoons Creamy Peanut Butter: This is really the star of the show. So sweet, so nutty, and a great way to get a little extra protein, peanut butter has this unique creamy and sticky quality that's perfect for balancing out our next ingredient. We recommend going with an organic natural peanut butter, such as this Kirkland's brand.
  • 1.5 to 2 Tablespoons Sriracha: So spicy! Use this to taste. Sriracha uses chili peppers, pickled garlic and distilled vinegar to make a hot sauce with a powerful punch in these spicy peanut butter noodles.
  • 1.5 Tablespoons Low Sodium Soy Sauce: This is a great way to get some saltiness and umami flavor into this sauce with one ingredient. You can use regular soy sauce, but personally we find it to be way too salty.
  • 1 Tablespoon Maple Syrup: This will add more sweetness to the dish while contributing to the sauce's robust flavor profile.
  • 1 Tablespoon Lime Juice: Adding a splash of brightness is usually a great choice for any sauce. Plus, it makes the recipe a little more like vegan Thai peanut noodles.
  • 0.5-1 Tablespoon Garlic Powder: You're welcome to use fresh minced garlic if you prefer, but we like our sauce smooth and love the flavor of garlic powder in there.
  • 3 Tablespoons Hot Water
  • 8 Ounces Pasta or Noodles of Choice: We like to use a Bucatini or regular spaghetti noodles for this dish. You could also get some soba noodles or udon noodles if you want actual noodles.
  • 0.5 Cup Green Onions, as Garnish
  • 0.25 Cup Peanuts, as Garnish: You can chop these with a knife or shove them into a zip bag and crush them by hand. You just want them to be in little pieces to add a little texture to your vegan peanut noodles.

Substitutions

Please note that some of these substitutions may make your sauce either thinner or thicker, depending on what you use. This can be an easy fix, though. If your peanut dressing is too thick, for example, you could add a splash of water or soy sauce to help loosen it. Likewise, if your peanut butter sauce is way too thin, you can add a little bit more peanut butter to make it thicker. Add a little of these ingredients at a time to make safe adjustments: it's easy to add more of something to the sauce, it's impossible to take it out.

  • Pasta: There are lots of substitutions out there for the noodles, such as ramen noodles, udon noodles, soba noodles, and of course any type of pasta. Just use any type of noodles you like! Gluten-free rice noodles can be a great choice for this for more authentic flavors. Another great gluten-free option are these Chickapea pasta noodles. This recipe will easily adapt to your favorite pasta or noodles!
  • Creamy Peanut Butter: Creamy almond butter is a great substitute for this recipe. You can replace it one to one for the peanut butter and it should still work great with the rest of the sauce ingredients. But we also have this Almond Butter Sauce (coming soon!) if you want to try a recipe that's optimized for almond butter.
  • Sriracha: Standard hot sauce can be used in a pinch if you don't have access to a bottle of sriracha. If you're worried about spiciness in general, you can forgo it. The recipe will just be more like creamy peanut butter noodles.
  • Maple Syrup: Agave is an easy replacement for maple syrup if you have that on had instead. You're looking to add a little sweetness from another source.
  • Lime Juice: Lemon juice can work in a pinch. You could also use something like rice vinegar or apple cider vinegar to add the brightness you need.
  • Other Ingredients: Feel free to add in other ingredients like sesame oil if you like. We didn't think it was necessary in this recipe.

How to Make Vegan Peanut Noodles

  1. Cook the Pasta: Bring a large pot of water to boil and then add your pasta. Cook until tender and then strain.
  2. Mix the Sauce: To a bowl or measuring cup, add the remaining non-garnish ingredients and then mix with a whisk.
  3. Add Sauce to Pasta: Place your pasta back into your emptied pot. Cover it with the peanut sauce and then combine.
  4. Garnish and Serve: Add it to a bowl or plate and top it with the green onions, crushed peanuts and any other toppings you want to add.

Expert Tips

  • Make the Sauce While the Pasta Cooks: The sauce comes together really fast, so you can get your pasta in the pot first to save some time. You can easily add a few sauce ingredients to your bowl, sneak in some pasta stirs, and then go back to making the sauce.
  • Mix the Pasta in a Large Bowl or Reuse your Pasta Pot: We would not recommend mixing it in your serving bowls. It can get quite messy that way.
  • Serve it with a Veggie: For a more complete meal, we recommend making a light side dish with this meal. You can try roasting a sheet pan of broccoli or air frying some Brussel sprouts. This can help you save some of the pasta for later!
  • Add Veggies TO the Dish: If you'd like to add veggies to this dish like shredded green or red cabbage, julienned red bell pepper/carrots/cucumber, cilantro, etc. you totally can. You may want to increase the amount of sauce you use. We'd recommend doubling the recipe if you'd like to add 2 cups of raw or cooked vegetables. If you just want to add 1 cup, simply increase the recipe by 50% (using 4.5 tablespoons peanut butter instead of 3, etc.)

Storage Instructions

Once your vegan peanut noodles have cooled, add them to a plastic or glass air-tight box container. They should last for 2-3 days. If you plan to store some of the pasta ahead of time, try to put it in the container, without sealing it, before adding your garnishes. Store the garnishes separate to keep them fresh. Reheat on a plate in the microwave for 2 minutes.

You could also reserve the sauce and store the noodles separate! Just put the sauce you don't use in a jar and store it in the fridge. It should last for 5 days in the jar and it won't absorb into the pasta. Doing this will let you meal prep this dish.

You can also serve this dish cold. We thought it was delicious both ways!

Frequently Asked Questions

Any Suggestions for Additional Garnishes?

A veggie stir fry would be great addition to these noodles. Red bell pepper, mushrooms, onions, carrots or parsnips are delicious on top of these creamy peanut noodles. You could also add fresh cilantro, a sprinkle of sesame seeds, or some grated fresh ginger. You could even add our crispy tofu, which you can air fry while everything else cooks.

Can I Serve this Cold?

Yes! We've tried it cold as well and it's so good. If you make your own pasta, be sure to store the sauce separate from the noodles. That way your cold peanut noodles will not absorb the sauce and it will be creamy when you add it.

If I Don't Want Spiciness but Want More Flavor, What Can I Add?

Onion powder and ginger powder are great flavor additions for the sauce. You could also replace the soy sauce with coconut aminos for a lower salt and a unique flavoring. Miso is also a nice option, but it is salty so you may want to be sparing with it.

Ingredients

Instructions

  1. Note 1:  Creamy almond butter is a great substitute for this recipe. You can replace it one to one for the peanut butter and it should still work great with the rest of the sauce ingredients. But we also have this Almond Butter Sauce (coming soon!) if you want to try a recipe that's optimized for almond butter.
  2. Note 2: Standard hot sauce can be used in a pinch if you don't have access to a bottle of sriracha. If you're worried about spiciness in general, you can forgo it. The recipe will just be more like creamy peanut butter noodles.
