Make This Easy Homemade Vegan Vanilla Pudding

Easy Vegan Vanilla Pudding is a simple yet classic sweet treat you can make from home. This delicious dessert is only 6 ingredients and only takes 10 minutes of work to make. Just let it set up in the fridge overnight and you'll have everything you need to satisfy your sweet tooth.

Hey Internet, having a homemade pudding recipe you can rely on is a great skill to have. Not only can it act as a simple dessert, but it can be used in so many other dessert recipes. In fact, we made this recipe with another one in mind. We've been craving some Vegan Banana Pudding, but we wanted to make an option for people who don't want to use a traditional vanilla pudding mix. 

Many pudding mixes are vegan, so long as you use plant-based milks like almond milk or oat milk, but they do tend to have a lot of additives to prevent inconsistencies. Some people might want to avoid them for that. Or you might just not have a box of mix at home. Either way, we've got you covered with this recipe.

This recipe is similar to our Vegan Chocolate Pudding, but chocolate isn't traditionally used for banana puddings. But now that I'm thinking about it, making a banana pudding with chocolate and peanut butter might be excellent... But that's a problem to solve for future Liz and Paul.

Why You'll Love This Vegan Vanilla Pudding Recipe

  • Super Easy: This recipe is done in just 5 to 10 minutes of work. Blend the ingredients, and then stir them in a pot for a little bit.
  • Simple Ingredients: With 6 ingredients, many of them are pantry staples you may already having in your house!
  • Super Customizable: Add as much (or little) sugar that you want, or replace it with sugar-free alternatives. This recipe is pretty forgiving.

Ingredients

Pick up the following ingredients for this tasty vegan vanilla pudding the next time you're at a grocery store. See the recipe card at the bottom of this post for full ingredients, instructions, and accurate nutrition information (to the best of my ability; please consult your physician, registered dietitian, or healthcare professional if you have specific dietary needs or need to meet certain daily values of any nutrient). I give substitutions for the ingredients in the section below this one, so most people can still make this recipe!

  • 2 Cups Non-Dairy Milk: We preferred almond milk, but soy milk will also work!
  • 1.5 Tablespoons Coconut Oil: This adds a nice richness to the pudding.
  • 1 Teaspoon Vanilla Bean Paste OR 2 Teaspoons Vanilla Extract: Both the vanilla extract and vanilla bean paste will work the same, but we find the vanilla bean paste is a bit more flavorful.
  • ⅓ Cup Organic Cane Sugar
  • ⅛ Teaspoon Salt
  • 2 Tablespoons Arrowroot Powder or Cornstarch: Most from-scratch pudding recipes use a thickener such as arrowroot powder or cornstarch. They both work equally well.

Toppings

Add your favorite fruit (like fresh berries) and more to take your vanilla pudding cup to the next level!

  • Fresh Blueberries
  • Fresh Raspberries
  • Fresh Strawberries
  • Or Any Fresh Fruit
  • Easy Coconut Cacao Granola
  • Vegan Chocolate Chips
  • Crushed Cookies
  • Fruit Compote or something equally amazing like our Caramelized Apples or Caramelized Peaches

Substitutions

  • Vegan Milks: Any other dairy-free milk like oat milk should work. If using a fattier plant, like coconut milk, you may need to alter the amount of oil you use.
  • Cane Sugar: Most granulated sugars should work, like coconut sugar or brown sugar. You could also try using maple syrup!  
  • Arrowroot Powder: Corn starch will work in a pinch if you don't have arrowroot starch! It might take a little longer to cook to the right consistency.

How to Make Homemade Vegan Pudding

  1. Blend: Add the salt, sugar, vanilla extract, plant milk, and arrowroot powder to a high speed blender. Blend until smooth for about 15 to 30 seconds.
  2. Melt the Coconut Oil: Grab a medium size pot and place it on medium heat. Add the coconut oil and let it turn from a solid to a liquid.
  3. Add the Rest: Take the content of the blender and add them to the pot.
  4. Whisk: for about 4-7 minutes, Whisk the pot frequently. It will be ready when the mixture is starts to thicken.
  5. Store: Pour the mixture your prepare container(s). Let chill for 6 hours or overnight.

Frequently Asked Questions

What sort of containers should I use for my pudding?

A glass airtight container should work great. You could also use bowls or small glass cups too! Using cling film or plastic wrap to cover the top of the pudding, you can just pop them in the fridge and they'll be ready to go for later.

My pudding is a little gloopy or lumpy after chilling?

Not a problem! Just mix it up with a spoon before serving and it should be good. It just comes with the territory when not using additives. 

Help, my vegan pudding recipe turned out too thick!

That happened to us too during the testing process! All you have to do is vigorously whisk in a few tablespoons of whichever non-dairy milk you used (we used almond milk) and it will be perfect!

How long should these puddings last?

They should last 3 to 5 days in the fridge. Just keep them covered if you used a cling wrap.
