Tofu cheese may sound like a strange term, but we think tofu is delicious in any form and we’ve been using it to make vegan cheese recipes for a long time.
Tofu is such an underrated vegan cheese ingredient. A lot of vegan recipes use cashews for their cheese replacements. And we get it; cashews easily add fattiness to whatever cheese you’re trying to veganize.
But tofu has such a creamy texture on its own! With all our vegan cheese that we’ve made while running ZardyPlants, we’ve found that tofu just lends itself better to the process. It not only helps people who have weaker blenders (we love our Vitamix and allows us to do sunflower seeds and cashews), but it just makes for a smoother cheese.
And if you need a fatty cheese made, it's easy to add a fat like coconut milk to get your mixture there. This is how we've done it for our vegan Brie, as well as our cheddar cheese wheels. They are so delicious! They go great with some crackers as a snack or hors d'oeuvres.
Tofu cheese is also a great option for people who are allergic to nuts and seeds, or people who are looking for a lower fat option.
