I love this vegan corned beef, and although all I can eat right now is soup 😩 I really would love a big plate of this.

I experimented with this recipe QUITE a bit while working on my Plant-Based Jewish Recipes e-book, and it’s also the base of my vegan pastrami recipe. The pastrami uses this recipe, but takes it a bit further to get that classic tangy pastrami taste.

I tested this recipe many different times, working to perfect that crust that you’ll find with corned beef. I also wanted the slices to be super tender, flavorful, and--sorry if you hate this word--moist.

I finally settled on a spice blend and set to work on making this one of the best vegan meat replacements I had ever tasted, and let me tell you: it delivers.

My husband, who went vegan with me over five years ago, often requests me to veganize things he misses. But corned beef (and pastrami) were things we both missed. 

This seitan corned beef is actually very easy to make and highly delicious, and easy to turn into pastrami (makes a great Reuben too!) or enjoy as is.

Whether I post make and post my vegan steaks, meatloaf, or ham, I always get a ton of questions on the potatoes so I gave them their own recipe.

I have to say (if I don’t, someone will lol) roasted potatoes seem like such an obvious dish in the category of “doesn’t need a recipe for 500,” but I’ve discovered over the past few years that there’s a formula for getting perfectly golden brown potatoes that are tender on the inside and crispy on the outside.

This is my dressed up but still super easy take on Aglio e Olio, a super delicious Italian dish that literally means garlic and oil. This dish is so very easy to make and traditionally it’s super simple, but I wanted to add a couple of extra touches to make it extra special.

I know that not everybody loves olives (so you can leave them out if you don’t like them), but I am obsessed with them and so is my husband. These Castelvetrano olives are so delicious and pair beautifully with the other flavors. 

And as usual I used a crap ton of garlic, added some parsley and kale, a splash of the pasta cooking water, and a bit of lemon juice and zest.

The other night I was just super craving my vegan spinach noodle kugel so I made it. Actually Paul made it. He claims he doesn’t know how to cook but… I think he really does.

I wish we gotten a little bit more video of it but we did get this because we were testing out a piece of equipment. 

I don’t know if I never told the story of this Kugel. 

Kugel is essentially noodle pudding. You’ll see it at basically any Jewish gathering or holiday meal. It’s usually sweet.

The original recipe for this savory noodle kugel is written by hand on a piece of paper, in one of the four boxes of recipes my maternal grandmother left to me. It’s the first one I ever veganized.

My grandmother catered Jewish events in Pennsylvania for  a half century. Every Bar or Bat Mitzvah, every wedding, every naming. The woman had 3 freezers, a convection oven in the basement, and a pantry bigger than most walk in closets. She lived for food.

I can feel her spirit in me when I cook. Thought I’d share a little of that with you today.

This is actually perfect to serve for Hanukkah, along with some vegan latkes or sufganiyot for dessert, of course.

Recipe for this vegan… I guess you could term it more like creamy baked noodles with spinach, for you goyim 😉🤭

Craving this sesame ginger tofu poke bowl right now but I’m moving and trying to use the last of my pantry stuff!

I don’t crave many salads in the winter, but I do like eating a nicely comprised bowl of a starch, a protein, and TONS of veggies. A little plant-based fat (such as avocado) definitely helps with satiety though it isn’t necessary.

This is one of my favorite lighter but still totally satisfying meals. I call it a Tofu Poke Bowl because that’s what it reminds me of, though since poke refers to raw fish that isn’t quite accurate lol. Semantics.

But! It is delicious. This particular recipe features sesame ginger tofu (yum!) fresh veggies, and cooked rice.

Puffed tofu is one of my fave things to eat out or from H-mart. It’s crispy and squishy in a good way. Really, it’s good, I promise.

I don’t know how else to describe it. Lightly chewy, definitely crispy, and amazing—how’s that?

This basic recipe only includes a few ingredients to make the basic tofu puffs. What you do with them is up to you.

While deep frying is the traditional method—and the method that will produce the softest and fluffiest puffs, you can also make baked tofu puffs to cut down on calories and fat from oil. Both are good options!

I do bake these most often but occasionally it’s fun to enjoy it this way.

I HIGHLY recommend using FRESH Tofu—the package will say Fresh on it. This can be found at Asian grocery stores and markets, or if you’re especially dedicated, you can make your own. While you can still make some tasty tofu using the normal water packed tofu (I recommend Firm or Extra Firm but NOT vacuum sealed tofu), it will be more chewy than fluffy. I’ve made this both with Extra Firm normal tofu and with Fresh Tofu and both were good, but the Fresh Tofu makes THE BEST puffed tofu.

My fave way to eat it is in stir fry. For this stir fry I used shallots, garlic, broccolini, peppers, shiitake mushrooms, beech mushrooms, and green onion and served it with the puffed tofu!

It’s snowing. My body is ready. For soup. ❄️

I have tons of awesome soup recipes, but for some reason I associate this vegan beef stew with fall so much. It’s just super hearty, super savory and really delicious.

The vegan beef is my homemade seitan, but people have also told me they’ve used gardein beefless tips, soy curls, and one person even used lentils which I thought was very smart.

When I was a kid my mom always used to serve this type of soup with cold crunchy apples on the side and it was just the best combo. and as I sit here shivering at my desk, I could really use a nice big plate of apples and a nice big bowl of soup.
