Hey Internet, mushrooms are one of the most important things to be familiar with when cooking vegan. They are super healthy and an important part of a plant-based diet! They can be the perfect side dish or main.
Sure, soy curls, tofu, and seitan can be delicious, but there are times when you can’t get those things.
Meanwhile, mushrooms are pretty much sold almost everywhere and you can use them in so many interesting ways. Mushrooms can be easily be the perfect substitute for meat or be used in a way that embraces their earthy nature.
And there are so many different types of mushrooms too! They have different textures and tastes. For example, Lion’s Mane mushrooms have a seafood, almost shellfish taste while fresh Shiitake mushrooms have a strong umami and meaty flavor. And this is before we get into different cooking methods to transform them even more.
Personally, we really like Portobello mushrooms, while they are technically the same as Baby Bellas and cremini mushrooms, they are just picked at different times, there’s something juicy about a Portobello. We use them to make vegan Portobello steaks and serve them as a main.
And some of our favorite recipes star mushrooms like our creamy vegan mushroom pasta or vegan mushroom risotto.
Anyway, let’s get into the basics of mushrooms.
Most Common Mushrooms
So one of the most common mushrooms are white button mushrooms. In fact, there are three versions of button mushrooms; they are just picked at different stages of development. Button mushrooms are picked when the mushrooms are young, while cremini mushrooms (also known as Baby Bella or brown mushrooms) are allowed to mature just a bit more. Finally, Portobello mushrooms are the fully matured version of this group of mushrooms.
Because of this and the fact that these mushrooms are easily farmed, a lot of recipes make use of these mushrooms. We tend to see them even in the smallest of grocery stores where we are (although sometimes it’s more about if a grocery store is more veg forward or not).
But just because they're common, don't think these mushrooms can't be made into epic meals. These mushrooms have an earthy flavor that can be played up when cooked over medium heat with a little vegan butter, vegetable broth, dry white wine, or soy sauce and finished with some fresh herbs—yum. You could add a little coconut milk and some all purpose flour to make a gravy easily.
However you're using them, you’ll want to cook them until they are browned and have shrunk down a lot. Mushrooms have a lot of water in them and they tend to shrink quite a bit, which is why cooking them down can really improve their texture.
But there is more that can be done with buttons, creminis, and Portobellos. For starters, they can make for great sauces and dips. Our vegan mushroom pâté uses brown mushrooms (which is yet another name for cremini mushrooms) to make a super umami snack. We’ve also used cremini mushrooms in a vegan mushroom sauce to make a super flavorful vegan mushroom gravy. We love including these kinds of mushrooms in our vegan stews such as our vegan beef stew oh and our creamy vegan mushroom soup. Also a cabbage and mushroom stew if you need a cozy meal. This year we have plans to make a mushroom chili, vegan mushroom bourguignon (a veganized version of a traditional French recipe), mushroom ragu, and a more rich stroganoff recipe.
Another great appetizer is our bite-sized vegan stuffed mushrooms, which are loaded with garlic, shallots, and vegan parmesan cheese. Or make a fun dip with caramelized onions, cooked mushrooms, vegan sour cream (or our sunflower seed cream with a little lemon juice) and some nutritional yeast for a savory flavor would be great. Don't forget the fresh parsley or fresh thyme and black pepper!
You can make our vegan mushroom pasta recipe, sauté garlic in a tablespoon of olive oil to make creamy garlic mushrooms (try a little cashew cream or cashew butter and water for this). Use gluten-free pasta if needed, of course. Serve with fresh vegetables or some vegan garlic bread.
As for Portobellos with their smoky and subtle sweetness, we have our juicy Portobello mushroom steaks for an easy main course. But Liz recently did these amazing Portobello Pizzas using our vegan mozzarella. We’ve even made Portobello bacon which goes great in a BLT or our vegan carbonara and has so much texture!
There’s so much more you can do with these guys too, but let’s leave that for below. Let’s talk about some other mushrooms.
Unique Mushrooms
Yes! Some of these are a little harder to find, while others are super seasonal. One kind of mushrooms we we use a lot is shiitake mushrooms. They are a bit more dense and chewy, with an earthy and umami flavor to them. They are originally from Asia, being primarily used in Chinese and Japanese cuisine.
Appropriately, we’ve made this amazing vegan udon noodles that makes use of the shiitake’s meaty texture. It’s really easy to make! They also go great in our vegan tom kha, adding to the flavor punch in that soup recipe. You can also sauté them for a great side dish and incorporate a dab of white miso paste as the perfect way to add saltiness and more umami flavor or of course you can just go with kosher salt.
King oyster mushrooms are another Asian mushroom that that make for a great meat substitute. These mushrooms are big and trumpet shaped. When cooked, they release an umami flavor. We use king oyster mushrooms in our vegan scallops with pasta that we serve with garlic sauce. They're really quite good! It also can be made into a pulled meat replacement, like this BBQ Vegan Pulled Pork Sandwich.
Enoki mushrooms are little guys that come in big groups. They are mostly water and contain very little fat. This makes them prefect for healthy, earthy dishes, like this Easy Vegan Pho recipe. They can be also used to make healthier version on savory treats, like these Crispy Fried Enoki Mushrooms.
These mushrooms, while a little less common in the supermarket, are still cultivated around the world. There are mushrooms out there are are real special treats that are super seasonal and will likely require you to go to the right farmers market to find them.
Chicken of the Woods is a great example of this. It's a mushroom that tastes and feels a lot like chicken. It's used to great effect in this Cream of Chicken of the Woods recipe. There's also shrimp of the woods that tastes just like shrimp. This sweet and garlicky vegan shrimp recipe is great with some pasta!
Working with Mushrooms
Like with any produce, you really need to wash mushrooms before you use them. I would recommend having a mesh strainer to wash them in. What we do is separate the mushrooms we are going to use for cooking and place them in the strainer. Be sure to check to see if any of the mushrooms have any mold growing on them. Toss them if they do.
Then after a quick rinse of all of them, we take each mushroom and scrub them under running water and then place them on a separate side of the strainer. You want to make sure that any slimy feeling on the mushrooms is coming off. If the feeling doesn’t go away or you feel a lot of softness in a mushroom, it has likely gone bad and needs to be discarded.
Once you have them washed, the sky's the limit with these guys. A good cutting board and some great knives are always a must for any cook and there’s so much you can do with that and a good nonstick skillet. To make things like our vegan pâté, you’re going to need a food processor.
Not everyone in the culinary world agrees with washing mushrooms. Many folks swear washing mushrooms waterlogs them and they just wipe them with a damp cloth or a paper towel. We’ll leave that decision up to you.
One quick thing to note is that while there are many foragers that go out to forests to gather their own mushrooms, we at ZardyPlants cannot recommend or condone such activities. We are not trained mushroom foragers and there are dangerous mushrooms out in the world and can seriously hurt you. If you wish to explore this route, we suggest you take some courses or learn from a local guide, if you can find one. And if you buy mushrooms from a farmer’s market, it’s always good to ask from the stall owner where they grow their mushrooms. Most are very willing to tell you!
Finally, if you're wondering how to store mushrooms, we've got some tips for you. Instead of leaving them in their containers from the store, we recommend drying off your mushrooms (moisture will make them go bad faster) and storing in a breathable cloth bag or paper bag. You could also try an airtight container lined with a clean kitchen towel or a paper towel.
