Hey Internet, after many years of creating new recipes, we've gathered quite a few personal favorites. A lot of them happen to be easy dinner recipes. Can you blame us though? Not only is dinner delicious (we both love savory dishes more), but since we've often had jobs or school while running ZardyPlants it was the main time we had to make recipes.
Luckily, all that work resulted in a lot of quick and easy vegan recipes. A lot of them are some of the most popular recipes on our site. This includes are most shared recipe; our 15 Minute Vegan Garlic Noodles. They are luscious and filling while only having 6 ingredients at most. If you try any of the vegan food on this list, you should definitely make it that one. We've got creamy pastas that are amazing, like our Vegan Creamy Pasta and One Pot Creamy Vegan Mushroom Pasta recipes.
And just because these are fast recipes, doesn't mean you can't have a healthy dinner. A lot of these recipes are already low on cholesterol and many of them are packed with veggies. Our Butter Bean Stew and Creamy Mushroom Soup have tons of fresh vegetables in them. We've got fresh spinach, carrots, beans, white onion, cherry tomatoes, and other great greens in a lot of the recipes below!

What Sort of Recipes are a Good Base For Any Dinner?
Proteins are always important for dinner time. They can be used simply to elevate basic staples, like rice, pasta, beans, etc, and vegetables. They let you cobble together a basic meal even when you only have random ingredients remaining the house. It's always great to have these on hand.
Our favorite protein recipes include this Instant Pot Seitan. Seitan is made from vital wheat gluten, which is flour that has been stripped of its carbohydrates. It leaves a high protein substance behind that can be made to taste like meat. We've added black beans for texture and more nutrients.
What's super cool about seitan is that it's easy to make it taste like any meat. All you have to do is alter the seasonings and add-ins (like tomato paste!) and it can taste like chicken, beef, ham, turkey; the options are only limited by your creativity! We've even made "turkey skin" using coconut milk and rice paper! We also really like adding nutritional yeast to seitan and think it really improves the texture and flavor.
Another one of our go to proteins is this Crispy Tofu. Take some super firm tofu, cube it and bread it, and then air fry it for 10 to 15 minutes. You get these lovely bite-size morsels that go great with almost any grain or vegetable. The breading process is super easy too: pour the cubes into a bowl of liquids and then shake them in a bag of dry ingredients. It should only take you about 5 minutes to get them ready to cook! Then it's about 10-15 minutes in an air fryer, depending on how crispy you want them. Serve with some white or brown rice or sweet potatoes, some crispy Brussels sprouts or your favorite veggie!
One of our favorite soy curl recipes is this Soy Curl Bacon. We use it not just for breakfasts! It's great in Vegan Mac and Cheese and you can make quick sandwiches with it, like this BLT or this Vegan Grilled Cheese. That with our Vegan Carne Asada and Vegan Pepper Steak, you'll have a bunch of easy flavor profiles of soy curls that you can use for almost any meal!
And of course we've got tons of vegan pasta recipes! What About Sides?
We've got plenty of sides for making a full meal! We've got buttery Vegan Mash Potatoes and Mushroom Gravy to pair with them. If beans are more your thing (they should be everyone's thing in our opinion, beans are a superfood!), you can try this Vegan White Bean Salad for another easy side dish.
How Do I Turn These Recipes Into Meal Prep?
A good place to start is to have some good sets of storage containers available. These glass square containers are ones we use every week. They are very versatile, fit in most lunch bags, and they are handy for splitting up a whole weeks of food. We also have these larger container that are great for storing large amounts of rice, beans, and even these seitan we make for the week. Finally, we have both these freezer bags and souper cubes to freeze everything for a long meal prep that needs to last more than a week.
Generally, most of these recipes can be stored in a fridge for 3-5 days. The hardest of those to make last are the pasta recipes. Pastas tend to absorb their sauces, greatly changing their flavors and consistency, usually for the worse. If possible, store the sauce separate from the prepared pasta in a glass jar. The same goes for salads and their dressings.
