Super Easy Tofu Quesadillas

Tofu Quesadillas are super easy to make! With just three ingredients, you'll have an amazing meal in just 5 to 10 minutes. Dunk them in some homemade vegan sour cream or guacamole!

Hey Internet, want some easy vegan quesadillas? Then you've come to the right recipe! 

Tofu is such a great vegan protein. It can be sliced, cubed, shredded, blended, etc. No matter how you prepare it, it can be made into so many different vegan meals.

Traditional quesadillas are a pretty simple, easy-to-make, flavorful dish and our recipe is too!

It might surprise you, but these vegan tofu quesadillas are also easy to make! Just shred some tofu (make it super flavorful and ahead of time with our Shredded Tofu recipe), add a sprinkle of vegan cheese, and then fold and cook them up.

We also have have some great options if you don't like store bought vegan cheese. Try our 5-minute Stretchy Vegan Mozzarella or 5-Minute Stretchy Vegan Cheddar. You could also try our Nut-Free Vegan Queso or our shreddable Vegan Cheddar Block Cheese.

It's that easy to have some golden brown quesadillas. So let's get busy making them!

Why You'll Love These Vegan Quesadillas

  • 3 Simple Ingredients: All you need is some flour tortillas (corn tortillas will work too), vegan cheese, and super firm tofu (or pressed firm tofu). You can prep in advance by making our super flavorful Shredded Tofu or you can make them more spontaneously and just season your tofu liberally with your favorite spices.
  • Easy to Make: This Tofu Quesadilla recipe is SO easy to make and with just a few ingredients (one is even meal prep friendly!), this recipe can come together in just 10 minutes.
  • Customize: You can add any other ingredients you like, such as refried beans or black beans, finely diced red onion or bell peppers, or even some pickled jalapeños or sriracha for a spicy tofu quesadilla.

Ingredients

Pick up these simple ingredients the next time you're at a grocery store. See the recipe card at the bottom of this post for full ingredients, instructions, and accurate nutrition information (to the best of my ability; please consult your physician or healthcare professional if you have specific dietary needs or need to meet a certain daily value of any nutrient). I give substitutions for the ingredients in the section below this one, so most people can still make this recipe!

  • 2 Large Tortillas: We used burrito sized tortillas to make this recipe, but if you want smaller quesadillas, you can use whatever size you have.
  • About 1 Cup Vegan Cheese: We used a shredded vegan Mexican blend but you can use your favorite vegan cheese. We recommend shreds for easier melting, but you can use slices if that's all you have.
  • About 1 Cup Shredded Tofu OR 16 Oz Super Firm Tofu: You can make our easy Shredded Tofu recipe in advance or shred up a block of super firm tofu (the kind that comes vacuum sealed, or you can press firm tofu with a tofu press) for this recipe using a box grater and season to taste with your favorite spices or just a dash of salt if you have a great dipping sauce like Vegan Guacamole, Nut-Free Vegan Queso, or Tofu Sour Cream!

Substitutions

  • Tortillas: Feel free to use corn tortillas if you prefer them; we just like flour tortillas a little better for tofu quesadillas. You can alternatively use your favorite wraps if you want.
  • Vegan Cheese: Prefer to make your own vegan cheese? Try our 5-minute Stretchy Vegan Mozzarella or 5-Minute Stretchy Vegan Cheddar. You could also try our Nut-Free Vegan Queso, our shreddable Vegan Cheddar Block Cheese, or take a look at any of our other vegan cheese recipes. Alternatively, you could use some refried beans or mashed potatoes!
  • Shredded Tofu: This IS a tofu quesadilla recipe, so we've featured our shredded tofu in the recipe, though you can absolutely shred or crumble your tofu and cook it in a pan (or don't if you don't mind the texture and flavor as-is). If you want to use something else, by all means do. Any type of vegan meat can be chopped up and added to a vegan quesadilla pretty easily!

How to Make Tofu Quesadillas

  1. Prep: Heat a large nonstick skillet over medium heat (if you do not have a nonstick skillet, you can lightly grease a large frying pan). 
  2. Assemble: Place tortilla in the center and add a layer of vegan cheese (about ¼ cup) to just one side of the tortilla. Add single layer of the shredded tofu (about ½ cup) and add a final layer of vegan cheese. 
  3. Close: Use a large spatula to help fold over the uncovered side and press down to seal the quesadilla. Cook 3-5 minutes, making sure to carefully flip halfway through. If you feel comfortable (and have a big enough pan), you can assemble the other one now and cook them simultaneously to save time. If you do not do this, be careful when making more quesadillas afterward (this recipe makes two but can easily be scaled) as the pan will get hotter as time goes on and you may need to lower the heat to keep them from burning.
  4. Serve: Cut into triangles if desired and serve immediately with vegan guacamole with plenty of lime juice, vegan queso, or tofu sour cream.
  5. Store: Refrigerate leftover tofu quesadillas in an airtight container in the refrigerator for up to 5 days. Reheat in a skillet or even the air fryer or toaster oven.
